The Origin of a Gesture
In 1982, a patented invention changed the fate of an extraordinary cheese. With its now-iconic circular motion, La Girolle® Originale transforms Tête de Moine AOP into exquisite cheese rosettes, enhancing both its flavor and visual appeal.
The first prototype
In 1982, Nicolas Crevoisier, the inventor of the Girolle® Originale, set out to find a simple and effective way to reveal the full finesse of Tête de Moine cheese.
His first prototype, entirely handcrafted, allowed him to validate the concept. He then developed a second, more refined model, which became the foundation of the Girolle® Originale as we know it today.
A bold idea
Then came the idea that would give birth to the Girolle® which we know today : piercing the Tête de Moine in the middle.
At the time this was judged a bold solution by the entourage of Mr Crevoisier, but it proved to be the best in terms of efficiency as well as ease of use.
An icon since 1982
Commercialisation could then begin. What was expected to be a modest success quickly became an international reference.
Today, the Girolle® Originale is used around the world, wherever Tête de Moine AOP is enjoyed, continuing the tradition imagined by Nicolas Crevoisier in 1982.
